Basil is the ultimate summer herb. In fact, its genetics only express themselves fully in warm climatic conditions. This is why our “Herbs Sommelier” have created assemblages full of freshness to complement dishes.
A floral and fresh flavour
Being a benchmark, our experts have kept the Genovese Type Basil as an essential element of this Assemblage. It forms the body of this Assemblage through its warm flavours of cloves, asserting both strength and length on the palate.
In order to cool down the ardour of the Genovese Type Basil, our “Herbs Sommelier” have selected the Thai Basil and the Aniseed Basil.
The Aniseed Basil, through its greenaniseed notes, structures this Assemblage whilst the notes of liquorice emanating from the Thai Basil offer more roundness. A pleasing fresh aftertaste appears through the eucalyptus notes released by the Thai Basil.
Tasty combinations
By blending the Genovese Type Basil, the Thai Basil and the Aniseed Basil together, our “Herbs Sommelier” have achieved a fresh and floral Assemblage, which will complement delicious white meats to those delicate flavours.
The application of this green and smooth Assemblage will enhance your roast chicken, low temperature supremes of guinea fowls or pan-fried veal cutlets.
If a cold application allows its unrivalled freshness to fully express itself, a hot application will also be appreciated for its delicacy. Thus, Assemblage N°17 could replace tarragon and chervil in a Béarnaise sauce.
